How to make chocolate chip cookies on the BBQ
DJ BBQ – otherwise known as Christian Stevenson – says his love of chocolate chip cookies came from spending time with his grandmother by the beach every summer growing up in America. “Grandma Della would bake these fresh every week and serve ’em still warm with a cold glass of milk. Simple pleasures that I still enjoy to this day,” he says. This is his grandmother’s recipe, and what DJ BBQ refers to as “goofproof”. “Underdone, overdone, perfectly cooked, they are super-good,” he adds. On the BBQ, he recommends using the target technique – where the coals are piled up in the middle – and using a plancha on top. Chocolate chip cookies Makes: 8-10 Ingredients: 115g softened butter 115g granulated sugar 50g soft light brown sugar 1 egg 1 tsp vanilla extract 120g plain flour, sifted ¼ tsp salt ½ tsp bicarbonate of soda 100g chocolate chips Method: 1. The most important instruction for this recipe is: do not eat all the cookie dough before cooking them. 2. Try to make sure all the ingredients are roughly the same temperature, as this will give you a smoother mix. Cream together the butter and sugars until light, pale and fluffy. Then mix in the egg and vanilla, followed by the dry ingredients. Lastly, stir through the chocolate chips. Now refrigerate the cookie dough in the bowl overnight. That’s right, you just made cookie dough and now you have to wait until TOMORROW before you can eat the cookies. I can only apologise. Forgive me. Tomorrow you’ll love me. 3. The next day, get your outdoor cooker going. 4. Roll the cookie dough into balls around 75-100g, depending on how big you like your sweet chocolate-studded frisbees. Next, cut some circles out of baking parchment – double the number of dough balls you have – ensuring they’re slightly bigger than the final size you want your cookies to be. Evenly squish each dough ball between two discs of baking parchment to create a cookie shape. 5. Place the paper-covered cookies directly on the plancha. Cook for five to 10 minutes on each side, flipping with a fish slice. If you like a chewier or crispier cookie, then cook for the shorter time, for crispy cookies cook for longer. 6. Unborn babies use ‘greedy’ father gene to get more nutrients from mothers, study finds
Unborn babies are in a perpetual nutritional tug-of-war with their mothers due to a “greedy” gene inherited from their fathers, a new study suggests. Scientists from the University of Cambridge have found that foetuses use the gene to “remote-control” their mother into feeding them extra food and control her metabolism. While the mother’s body wants the baby to survive, it needs to keep enough glucose and fats circulating in her system for her own health in order to be able to deliver the child, breastfeed, and reproduce again. Amanda Sferruzzi-Perri, professor in Foetal and Placental Physiology, a Fellow of St John’s College and co-senior author of the paper, said: “It’s the first direct evidence that a gene inherited from the father is signalling to the mother to divert nutrients to the foetus.” Dr Miguel Constancia, MRC investigator based at the Wellcome-MRC Institute of Metabolic Science and co-senior author of the paper, said: “The baby’s remote control system is operated by genes that can be switched on or off depending on whether they are a ‘dad’s’ or ‘mum’s’ gene’, the so-called imprinted genes. “Genes controlled by the father are ‘greedy’ and ‘selfish’ and will tend to manipulate maternal resources for the benefit of the foetuses, so to grow them big and fittest. “Although pregnancy is largely cooperative, there is a big arena for potential conflict between the mother and the baby, with imprinted genes and the placenta thought to play key roles.” The new study looked at how the placenta communicates with the mother through the release of hormones so she can accommodate her baby’s growth. In pregnant mice, scientists selectively altered the signalling cells in the placenta that tell mothers to allocate nutrients to her developing foetuses. The baby’s genes controlled by the father tend to promote foetal growth and those controlled by the mother tend to limit foetal growth, experts say. Professor Sferruzzi-Perri explained: “Those genes from the mother that limit foetal growth are thought to be a mother’s way of ensuring her survival, so she doesn’t have a baby that takes all the nutrients and is too big and challenging to birth. “The mother also has a chance of having subsequent pregnancies potentially with different males in the future to pass on her genes more widely.” In the study researchers deleted the expression of an important gene called Igf2, which provides instructions for making a protein called “Insulin Like Growth Factor Two”. Similar to the hormone insulin, which is responsible for making glucose and controlling its levels in our circulation, the gene promotes foetal growth and plays a key part in the development of tissues including the placenta, liver, and brain. Dr Jorge Lopez-Tello, a lead author of the study based at Cambridge’s department of physiology, development and neuroscience, said: “If the function of Igf2 from the father is switched off in signalling cells, the mother doesn’t make enough amounts of glucose and lipids – fats – available in her circulation. “These nutrients, therefore, reach the foetus in insufficient amounts and the foetus doesn’t grow properly.” The scientists found that deleting the gene also affects production of other hormones that modulate the way the mother’s pancreas produces insulin, and how her liver and other metabolic organs respond. Babies with Igf2 gene defects can be overgrown or growth-stunted. And the researchers say that until now, it was not known that part of the gene’s role is to regulate signalling to the mother to allocate nutrients to the unborn child. The mice studied were smaller at birth and their offspring showed early signs of diabetes and obesity in later life. Professor Sferruzzi-Perri said: “Our research highlights how important the controlled allocation of nutrients to the foetus is for the lifelong health of the offspring, and the direct role the placenta plays. “The placenta is an amazing organ. At the end of pregnancy, the placenta is delivered by the mother, but the memories of how the placenta was functioning leaves a lasting legacy on the way those foetal organs have developed and then how they’re going to function through life.” The findings are published in the Cell Metabolism journal. Ozempic users report stomach paralysis as weight loss drug side effect: ‘I wish I never touched it’
A recent investigation has found that some Ozempic and Wegovy patients suffered from severe gastroparesis, also known as stomach paralysis, after taking the medications. In a report from CNN published on 25 July, two patients reported that their “stomachs are paralysed” after taking type 2 diabetes drug Ozempic – a semaglutide injection known for its weight loss side effects. “I wish I never touched it. I wish I’d never heard of it in my life,” Joanie Knight, a 37-year-old from Louisiana, told CNN. “This medicine made my life hell. So much hell. It has cost me money. It cost me a lot of stress; it cost me days and nights and trips with my family. It’s cost me a lot, and it’s not worth it. The price is too high.” Emily Wright, a 38-year-old teacher from Toronto, said she vomits so frequently that she had to take a leave of absence from her job. “I’ve almost been off Ozempic for a year, but I’m still not back to my normal,” she said. According to CNN, both women have been diagnosed with severe gastroparesis, a disorder that slows or stops the movement of food from the stomach to the small intestine, per the Mayo Clinic. Wright has also been diagnosed with cyclic vomiting syndrome, which causes her to throw up multiple times a day. Meanwhile, one Wegovy user claimed she began experiencing stomach problems after her doctor prescribed her the weight loss drug – which works by mimicking a hormone called glucagon-like peptide 1 (GLP-1), regulating blood sugar levels and slowing down the rate at which food leaves the stomach to create the feeling of fullness. However, the medication caused her to vomit so much that she became dehydrated and needed to visit urgent care. Brenda Allen, from Texas, has since been managing her nausea and vomiting with a medication called Zofran and prescription probiotics. Now, the US Food and Drug Administration has said they’ve received reports of stomach paralysis among patients taking the medications. “The FDA has received reports of gastroparesis with semaglutide and liraglutide, some of which documented the adverse event as not recovered after discontinuation of the respective product at the time of the report,” the agency said in a statement to CNN. However, officials clarified that they were unable to determine whether taking Ozempic or Wegovy was the cause of stomach paralysis, or if it was caused by a different issue. “Gastroparesis can be a complication of diabetes that is related to long-standing or poorly controlled disease, further complicating the ability to determine what role the drugs played in the reported events,” they said. As for whether patients should be warned about taking the drugs, the FDA maintained that taking the medications, such as for treating diabetes or weight management, may still “outweigh the risks in some patients with gastroparesis or delayed gastric emptying”. In response to reports of stomach paralysis, Novo Nordisk – the manufacturer behind Ozempic and Wegovy – noted that these drugs have been extensively studied in the real world and in clinical trials. “Gastrointestinal (GI) events are well-known side effects of the GLP-1 class,” the company told CNN. “For semaglutide, the majority of GI side effects are mild to moderate in severity and of short duration. GLP-1’s are known to cause a delay in gastric emptying, as noted in the label of each of our GLP-1 RA medications. Symptoms of delayed gastric emptying, nausea and vomiting are listed as side effects.” Last week, the American Society of Anesthesiologists also issued a warning that those who take GLP-1 agonists should avoid the medications a week before surgery because they may increase “risk of regurgitation and aspiration of food” while under anesthesia and deep sedation. Ozempic, a once-weekly injection used for the treatment of type 2 diabetes, has skyrocketed in use after people were reportedly prescribed the FDA-approved diabetes medication as an “off-label” weight loss drug. However, because of its increasing popularity, it has led to national shortages of the diabetes treatment - leaving those who actually need Ozempic without it. Meanwhile, Wegovy and Mounjaro are popular once-weekly semaglutide injections specifically approved for the treatment of obesity and weight loss. There are many side effects of taking medications like Ozempic, Wegovy, and Mounjaro. According to the FDA, the most common side effects of taking Wegovy are nausea, diarrhea, vomiting, constipation, abdominal pain, headache, fatigue, indigestion, dizziness, and digestive disorders. The FDA has also warned about more serious complications that can occur from use of Wegovy or Mounjaro, such as the “potential risk of thyroid C-cell tumours,” pancreatitis, gallbladder problems, acute kidney injury, increased heart rate, and suicidal behaviour or thinking. Taking Ozempic can also lead to possible thyroid tumours, including cancer, pancreatitis, changes in vision, and kidney and gallbladder problems. The Independent has contacted Novo Nordisk and the FDA for comment.
