Grab your baskets and your blankets because it’s National Picnic Month (AKA it’s summer guys, just get out there). Nothing says dining al fresco in Britain than a sausage roll, but the recipe for honey and mustard sausage rolls below is so incredibly good you’ll want to make them all the time. The same goes for sandwiches, as long as they’re not soggy. Sometimes you dream about sandwiches, hoping they’ll be as delicious as you dreamed. Well, the mortadella, pesto, burrata focaccia sandwich with garlic confit aioli one below is. It has crisp pesto focaccia, pesto, burrata, mortadella, rocket and a homemade garlic confit aioli. Don’t forget dessert! These elderflower and raspberry jellies are so easy to make, transport and, most importantly, devour. Honey and mustard sausage rolls These honey and mustard sausage rolls are so incredibly good you’ll want to make them all the time. We’re using Asda’s Extra Special Orange Blossom Honey sourced from bees that feed on orange blossom in Spain and Mexico giving it a sweet citrus scent. Stirred into the filling and mixed with some fresh thyme to drizzle over the hot pastry when they come out of the oven. Just heaven! Serves: 6-8 Prep time: 35 minutes | Cook time: 25-30 minutes Ingredients: For the filling: 1 pack of Asda’s Extra Special Cumberland Sausages 1 heaped tbsp grainy mustard 1 tbsp Asda Honey Blossom Honey 2 tbsp chopped parsley Salt and pepper 1 sheet ready rolled puff pastry 1 egg, beaten Sprinkle of sesame seeds For the drizzle: 5 sprigs of thyme, leaves only 1 tbsp honey For the dip: 3 tbsp mayonnaise 1 tbsp grainy mustard Method: Preheat the oven to 200C. Line a baking tray with parchment. Remove the sausages from their skins and place the sausage meat in a bowl. Add the mustard, honey, parsley and season well. Stir to combine. Place the pastry on a board and cut in half lengthways. Divide the pork mixture in two. Place one portion of the meat on the long edge of one piece of pastry and shape into a sausage roll shape, pinching the seam and rolling it over so the seam is underneath. Repeat with the other roll. Brush with some beaten egg. Slice into portions and scatter with sesame seeds. Place on a baking tray and bake for 25-30 mins until golden and cooked through. For the drizzle, heat the honey gently in a pan for a minute and add the chopped thyme. Drizzle over the hot sausage rolls just before serving and serve with the mustard mayo dip. Enjoy! Mortadella, pesto, burrata focaccia sandwich with garlic confit aioli Sometimes you dream about sandwiches, hoping they’ll be as delicious as you dreamed. Well, this one is. It has crisp pesto focaccia, pesto, burrata, mortadella, rocket and a homemade garlic confit aioli. Serves: 1 Prep time: 15 minutes Ingredients: For the garlic confit aioli: 10 garlic confit cloves 1 cup garlic confit olive oil 1 tbsp lemon juice 1 egg Pinch of flakey sea salt For the sandwich: 2 slices pesto focaccia 1 x burrata 4 tbsp green basil pesto 75g Italian mortadella 25g wild rocket Method: Make the garlic confit aioli: Place all ingredients into a glass container or jug that is just wide enough to fit a hand blender. Blend all ingredients together while slowly incorporating all of the oil. Continue until you have a thick consistency. Store in an airtight container or jar in the fridge for up to 3 days. Assemble the sandwich: Cut your focaccia into thirds lengthways. Slice 1 piece of the focaccia in half. Drizzle cut side with olive oil and toast in a pan until golden. Assemble your sandwich by beginning with a layer of the garlic aioli, a spoon of pesto, followed by slices of the mortadella, burrata, torn in two, and rocket, finished with a pinch of salt and pepper. Top with the other half of the focaccia and cut in half. Enjoy! Elderflower and raspberry jellies These elderflower and raspberry jellies were always on the menu when I catered for parties and people always chose them. They were so popular, and they’re so easy to make. Serves: 6 Prep time: 15 minutes | Cooling time: 4 hours overnight Ingredients: 8 sheets leaf gelatin 350ml elderflower cordial 1 punnet raspberries Cream or ice cream (to serve) Method: Soak the gelatin in cold water for a few minutes, then drain. Pour 100ml of boiling water over the gelatin and stir to fully dissolve. Allow to cool for a couple of minutes, then stir in the elderflower cordial and 250ml of cold water. (I always wet the inside of the jelly mould if I’m planning on turning the jellies out afterwards before I add the jelly mixture). Divide the raspberries into glasses or ramekins or a large glass bowl and pour over the liquid. Cover and put in the fridge to set for at least 4 hours-it works best if left overnight. (If you want the berries to be suspended in the jellies, pour a third of the mixture into the moulds and set in the fridge, then add the berries so they lie on top of the set layer and pour over the remaining mixture). To remove from the mould, if using, dip the bottom briefly into a bowl of hot water, cover with a slightly larger plate and with one confident movement, invert the mould so that the jelly lands neatly onto the plate. Serve the jelly with cream or ice cream. Reusable water bottles are beneficial in so many ways. Helping keep you hydrated, they also cut down on single-use plastic, and save you money every time you refill instead of buying a new bottle of water. Plus, with all the chic stainless steel flasks and glass bottles on the market – not to mention sporty carrying straps – they’ve become something of a fashion accessory. Trying to hit the NHS-recommended eight glasses of water a day for adults is an excellent idea, of course, but did you know there’s one way your refillable bottle could potentially be detrimental to your health? According to a study from waterfilterguru.com, reusable water bottles contain an average of 20.8m colony-forming units (CFUs) of bacteria, which equates to 40,000 times more than the microbes on a toilet seat. So what might be the consequences if you continuously sip and refill without washing your bottle properly between uses? We asked health experts to talk through the risks… Bottling up bacteria “A common misconception when it comes to reusable water bottle hygiene is that as you’re typically filling it with pure water and it’s only coming into contact with your own mouth, there’s little need to clean it often,” says Dr Donald Grant, senior clinician at The Independent Pharmacy. However, every time you drink from the bottle, you’re transferring bacteria from your mouth, which can then multiply in the container. “Anything that is reusable can be prone to accumulating dirt, dust or debris and, as a result, bacteria,” says private GP Dr Suhail Hussain. “This is exacerbated by the fact water bottles are the ideal environment for harbouring bacteria due to being moist.” Hard to reach crevices – for example, inside a screw top or under a flip-up straw – could also develop mould, and then there’s contamination from other sources. “When you store it in a gym bag, for instance, it can pick up bacteria from the interior of the bag or anything else stored in it, while you can also transfer bacteria from your hands to your bottle,” says Grant. “If your bottle has a valve cap, you may need to lift or twist it with your fingers, and this can transfer bacteria you may have picked up from touching other objects or surfaces.” What types of microbes are found in water bottles? “These might be simple commensals such as streptococcus and staphylococcus, which normally live in symbiosis with their host (i.e. us) but can become problematic if they accumulate, or the individual is under the weather,” Hussain says.“Bacteria such as E. coli – a common cause of urine and bowel infections – can often colonise the water bottle following repeated handling, such as taking the cap on and off.” These bacteria can potentially cause a variety of issues. “You may become sick and develop gastric illness, such as diarrhoea or vomiting,” Hussain continues. “Gram negative rods – another common bacterium found in unwashed bottles – can lead to urogenital tract infections and pneumonia.” Grant warns: “If there’s a build-up of mould inside the bottle, this can cause allergy symptoms, such as a runny nose, sneezing, or red and itchy eyes. Symptoms might be more severe for someone with asthma.” How often should you wash your reusable water bottle? “To minimise your risk of getting sick, you should ideally clean your water bottle after each use,” Grant says. “As a minimum, you should aim to wash it thoroughly at least a few times a week.” Hot water and washing up liquid are all you need to banish bacteria on the daily. “Fill the bottle with hot soapy mixture and swill around, or leave to soak in a detergent mixture,” Hussain advises. “Remember to pay special attention to lids/caps and screw top regions – use a clean brush [to scrub them].” If you’ve neglected your bottle for a few days and it needs a deeper clean, Grant suggests: “Soak your bottle overnight in a solution of half vinegar and half water. Billy Porter has re-addressed the criticism he made about Harry Styles becoming US Vogue’s first-ever solo male cover star in 2019. At the time, the former One Direction singer appeared on the cover of the fashion magazine wearing a Gucci dress. Porter, who is best known for starring in the hit TV series Pose, said in an interview The Sunday Times in 2020 that he had several issues with Vogue’s decision to feature Styles, with the actor claiming that all the singer had to do to break barriers was “be white and straight”. “I was the first one doing it and now everybody is doing it,” he said. “I’m not dragging Harry Styles, but... He doesn’t care, he’s just doing it because it’s the thing to do. This is politics for me. This is my life. “I had to fight my entire life to get to the place where I could wear a dress to the Oscars,” Porter added. “All [Styles] has to do is be white and straight.” Porter is known for championing gender-neutral fashion. He wore an iconic tuxedo dress, custom-made by designer Christian Siriano, at the 2019 Oscars. At the Met Gala that same year, he wore a Cleopatra-inspired golden catsuit with wings, and arrived at the event in a golden litter carried by six shirtless men. “Watermelon Sugar” singer Styles frequently performs in gender-neutral clothing, and told US Vogue in his cover story: “Clothes are there to have fun with and experiment with and play with. What’s really exciting is that all of these lines are just kind of crumbling away. There’s so much joy to be had in playing with clothes.” “I’ve never really thought too much about what it means – it just becomes this extended part of creating something,” he added. After making his initial comments, Porter issued an apology to Styles live on The Late Show with Stephen Colbert, telling the camera: “Harry Styles, I apologise to you for having your name in my mouth. “It’s not about you. The conversation is not about you.” Porter went on to explain that the conversation is “deeper,” as it is actually about “the systems of oppression and erasure of people of colour, who contribute to the culture”. After acknowledging that there is a lot to “unpack” regarding the topic, Porter noted that he is willing to do so as long as it is without the interference of “the cancel culture of the internet”. “I’m willing to unpack it, sans the dragging and cancel culture of the internet, because I do not now, nor will ever, adjudicate my life or humanity in sound bites on social media,” he said. “So when you’re ready to have the real conversation, call a b****. OK? I’m ready to have it!” In a new interview with The Telegraph, published on Friday (11 August 2023), Porter explained how he would have better approached Anna Wintour back in 2019. Months before the Harry Styles Vogue cover was revealed, Porter had participated in a Q&A with Anna Wintour in front of Condé Nast staff. “That b**** said to me at the end, ‘How can we do better?’ And I was so taken off guard that I didn’t say what I should have said.” Now, looking back, Porter reflected on what he wished he had said: “Use your power as Vogue to uplift the voices of the leaders of this de-gendering of fashion movement.” However, as Porter reflected: “Six months later, Harry Styles is the first man on the cover.” “It’s not Harry Styles’s fault that he happens to be white and cute and straight and fit into the infrastructure that way … I call out the gatekeepers,” he said. Porter now doesn’t claim to be “the first” to push against gender stereotypes in fashion. “I know David Bowie existed, I know Sylvester existed,” he told the publication. You’re using my community – or your people are using my community – to elevate you. You haven’t had to sacrifice anything,” he said.
