Eddie Huang: ‘I’ll never eat at BAO London – I know mine’s better’
For a decade, Baohaus was one of the best-known restaurants for Taiwanese fare in New York City. According to Eater, the restaurant “helped lay the cultural and culinary groundwork for an ambitious class of modern Taiwanese spots” in the city. It also catapulted founder Eddie Huang to fame as his culinary expertise was thrusted into the spotlight with shows on the Cooking Channel (Cheap Bites), Viceland (Huang’s World) and MTV (Snack Off). He first opened Baohaus on the Lower East Side of Lower Manhatten in 2009, before relocating it to a bigger venue in the East Village. During the 10 years he ran Baohaus, Huang also wrote his memoir Fresh Off The Boat, which led to the TV series of the same name, starring Randall Park and Constance Wu. But in 2020, around seven months into the coronavirus pandemic, Huang announced that Baohaus would be no more. At the time, he wrote in an Instagram post: “I opened this restaurant to tell my family’s story through food at a time when no one was giving Asian Americans a chance in TV, film, books or media generally.” Since then, however, things have changed drastically for the diaspora; this year, the celebrated Asian-led cast of Everything Everywhere All At Once clinched seven Oscars, including Best Picture, Best Actor (Michelle Yeoh) and Best Director (Daniel Kwan and Daniel Sheinert). Now, Huang is casting his eye back to Baohaus, but this time he’s bringing it across the pond and into London. His three-month residency at Neighbourhood in Islington – which previously held “ramen junkie” Ivan Orkin’s Ivan Mazemen residency – will dominate this summer with his signature Taiwanese baos, fried chicken and noodle dishes, bringing a bowl of the Big Apple to the Great Smog. I sat down with Huang over a steaming, fragrant bowl of Taiwanese mince pork stew and rice to talk about what Baohaus’ legacy in New York was, its future in London, and what it means to have a vision. How did it feel when you closed Baohaus in NYC? I always loved having Baohaus. I never intended to close it, but the pandemic hit and I went to Taiwan to be safe, but our landlord kept on charging rent in New York. I just didn’t see an end to it. I’ve been wanting to reopen for a while but when I got home, I had to immediately get to work promoting Boogie. It was kind of bittersweet, but I try to think about everything from a more existential perspective. To have owned a restaurant for 10 years in New York while writing a memoir and doing all these shows, and then directing my first film… I just felt an immense sense of accomplishment and I felt like it was really a part of the fabric of downtown New York. So many people had come through those walls and it meant so much to me, so I was just really proud even though it was closing. It forced me to look back on everything and I had a sense of gratitude and pride, and I wasn’t angry at all. I think I was sad that it was closing, but thankful to the universe for the time that I did get. Baohaus left a legacy for Taiwanese food in New York that spread across the rest of the Western world. How does it make you feel? Even when I go back to Taiwan, people will say, ‘Yo, that’s the pork bun kid’. That’s my name back home. I’m very, very grateful that I made a lot of people happy and Taiwanese people were proud of it, and that New Yorkers were proud of it and loved it. But now, starting it back up in London is just par for the course for me. I’ve never lived in one place. Born in DC, grew up in Orlando, made New York my home. I would say I identified with New York more than anywhere else. I got dragged to LA for my work and then now I got dragged out to London to open Baohaus, so this [Neighbourhood] is now the new home base for the next three months. But the idea is to then start to look at brick and mortar spaces in London and hopefully make it more permanent. What makes Bao Haus stand out? There’s a lot of Taiwanese cooking in London now. What really defines my cooking is there is a straight line between my grandma, my mother, and myself. There are very, very small things I do to adapt it up for my taste or modern tastes, but it’s not adding trendy ingredients or smashing things together. For example, this mince pork stew is how my grandma and my mum would make it. The only thing I pay more attention to is knife skills and the exact cut of the pork belly mixed in with the ground meat. It’s the same with the Chairman Bao, it’s exactly like the baos you get in Taiwan except that I red-cook my pork instead of brown braising. So I stay within the Taiwanese pantry, but I really work on the technique. I read that you don’t really like being called a chef. What don’t you like about that chef territory? The thing is, I definitely think cooking is an art, right? Even the guy selling a dollar bowl of rice is just as artistic to me as somebody doing a tasting menu. But I feel like every generation has these chefs whose food always has to be about them. It’s less about culture and community, and more about, ‘Check out my new idea, my new thing’ and none of it ever has staying power. I get disappointed going to a lot of young chef restaurants because they’re working their s*** out and they want you to pay for their food because they feel they’re being creative. Like, ‘Because we were being creative, you should f***ing pay us and buy our food’. And I’m like, well, this just doesn’t taste f***ing good. If you’re going to charge people this, s*** should be good. There’s a lot of ego. A lot of people didn’t set out to be chefs, they say, ‘I was in fashion or I was in music, or I was a director and I busted out and ended up in food’. People see food as a place they can be all artistic and they think they can creative-direct a restaurant, but this s*** is a lot harder than you think. You can have a cool brand and a great vibe, but to keep people coming back for 10 years, your food’s gotta be really good and be a good deal for your customers. Everything is exciting when it’s new, but does it stand the test of time? Do you keep thinking about it the next day? Are you a perfectionist? Here’s an example: chips. We were known for our taro fries in New York. I did taro fries because you can get French fries anywhere, and they go great with our food, but I wanted to do something different. So I would brine the taro, black it and then double fry it, and they were some of the best fries I’ve ever had and people went nuts for them. But it’s much harder to source taro here in London, because I want the whole fresh taro, not frozen. It was proposed that we do French fries, but they were bringing in frozen ones. But I didn’t want anything like that on our menu that isn’t the best version of it. I guarantee you everything on our menu is the best version you can get here in London. No one’s going to touch my bao. I know there’s another place here, BAO. I’m not even going to eat there. I know mine’s better. I will not try it. I will not. So, back to the fries, I said those fries aren’t going on my menu because they’re not the best fries. So now we’re sourcing all kinds of potatoes. Certain restaurants like St John’s only have chips seasonally when the potato is consistent, and I like that. I like when people are like, when it’s good, it’s good, and I will serve it to you then, and when it’s not good, I’m not going to serve it to you. That philosophy needs to be adopted by more. You don’t have to serve everything, you don’t have to do everything. You don’t have to be the most clever. Just be the best version of you and do what you do best. You know, I got a dozen madeleines from St Johns and I smuggled them all the way back to LA. My wife was like, ‘Dude, are these going to be good?’ After my flight and then another day in between, I heated them up and they were phenomenal. I gave some to my dogs – my dogs got to eat St Johns madeleines! They went crazy. You used to host a TV contest show called Snack, where people got random ingredients and had to make something with it. What’s the best thing you made with random ingredients? I invented the Cheeto fried chicken. It happened when I was really high one night. I didn’t have any bread crumbs, so I crushed up Cheetos in a bag, then coated the chicken and fried it. This s*** is crazy. It was a lot of fun but I spent a lot of time on it and then I found the right Cheetos, the right cheese dust, and I think we really perfected the dish. We only offered it once a year on 4/20 at Baohaus, it became a tradition. So if we have a brick and mortar space in London, I would absolutely bring the Cheeto fried chicken bao back only on 4/20. You’ve worn a lot of hats in your lifetime, restaurant owner, chef, author, director, fashion designer. How do you feel about hustle culture? Everything right now is based on the image and identity that you’re selling. Who are my friends? How do I dress? How am I curating my life? What starter pack do I fit into? I get it – I definitely think it’s important to work extremely hard because it’s hard to make money right now. The income inequality gap is insane and my solution to that is to acquire a skill and just refine it. If you have a tangible skill, you’re already ahead of most people in your generation because most people have knowledge and contacts and willingness, but do they have an actual skill? For example, the idea of a creative director is just so funny. What’s the skill? There’s very few creative directors who are skilled and honour the craft, but being a creative director is not just knowing a few really good photographers and good graphic designers and telling them what to do. You’re telling a story, you’re directing the creative. Do you have the vision? It’s not just the mood board, they need to take it seriously. Norfolk may not seem the most obvious place to look for a boutique place to stay, but the fact is the county can lay claim to some of the best small boutique hotels in the country, especially in the chi-chi reaches of its fabled North Coast. As a county patchworked by country estates – most of them with fancy mansions built by local bigwigs – Norfolk scores particularly well on small and elegant country house hotels that have been gussied up with style and flair for the 21st century. It’s also a county of brilliant pubs, and there are any number of revamped inns that have added cosy rooms and a special food offering. Indeed, Norfolk tends to be a region of small independent businesses rather than mega-chains, and there are one or two small pub groups that place a strong emphasis on high-quality accommodation and food of local provenance. To help you choose where to rest your head, we’ve put together a list of the best boutique places to stay in the county. Best hotel for families: The Grove Location: Cromer Situated between the Norfolk resorts of Cromer and Overstrand, this is not a beach hotel in the traditional sense – there are no sea views. But it has a tucked-away feel that is irresistible, and you can walk to the beach in a matter of minutes, escaping through the trees of the hotel’s secluded garden as if en route to your own secret place. A family-run hotel, it has a welcoming and comfortable feel that can only be achieved after years in the business, with 16 well-appointed guest rooms split between the main house and the Orchard Rooms in the grounds, supplemented by a scattering of self-catering cottages, glamping yurts and a giant shepherds hut. The rooms are simple, understated and homely, with up-to-date furnishings and well-appointed en-suite bathrooms. There’s also a consistently good restaurant, open for lunch and dinner, and service is terrific. Meanwhile, the grounds are home to a heated indoor swimming pool and a funky ‘massage hut’ offering various treatments. Best hotel for foodies: Morston Hall Location: Morston Just a few miles from picturesque Blakeney and just footsteps from Morston Quay in North Norfolk, Morston Hall sits surrounded by beautiful gardens – an oasis of calm in what can be a busy spot during the summer months. Once you’re within the hotel’s flint walls, you feel like nothing bad could happen to you, and you can enjoy the comfy rooms and on-point cooking of chef-patron Galton Blackiston. The rooms are very comfy indeed, divided between the main house and an annex in the garden, and have everything you could possibly need, from private terraces and smart TVs, to Nespresso machines and homemade cookies, fresh milk and still and sparkling water. En-suite bathrooms are large, with a walk-in shower, robes and Noble Isle toiletries and a separate bathtub with its own TV. But the rooms aren’t really the point: you’re paying for the glorious peace of the location, the gardens that surround the house in a fertile embrace and a restaurant where the devotedly local menu changes every day, depending on what’s available and in season – whether it’s from the Hall’s fecund kitchen garden or mini-smokehouse, or the various fish and seafood suppliers and local farmers that Galton deals with. The one thing you can predict is that Galton will cook your breakfast himself the following morning, when he likes to chat to guests and find out how they enjoyed their dinner the night before. Best hotel for walkers: Titchwell Manor Location: Titchwell Looking out over the the salt marshes of the North Norfolk coast, Titchwell Manor is one of the best places to stay – and to eat – in an area that’s not exactly short of options. Divided between a main building, cottage annexe and stable block, it houses 26 individually styled boutique rooms ranging from the cheapest ‘Good’ doubles through ‘Better’ up to ‘Best’ and ‘Signature’ rooms, featuring super-king-size beds, private patio areas, freestanding baths and separate showers. A couple even have their own terraces with private hot tubs. If that’s not quite private enough, you can always opt for a shepherd’s hut in the garden, with its own shower room, living area, hot tub and wood-burner. All the rooms have good wifi, smart TVs, robes, tea- and coffee-making facilities and recently updated bathrooms. You can have an in-room massage, and a third of the rooms are dog-friendly – nice to know, given the excellent walks in all directions. Work up an appetite on the Norfolk Coast Path before dining at the hotel’s renowned 3 AA-rosette restaurant – or just pick up some fish and chips from its well-known sister business, Eric’s. Best hotel for shopping: The Assembly House Location: Norwich Run by revered local chef Richard Hughes and his wife Stacia, the Assembly House occupies a beautifully renovated Georgian building bang in the centre of Norwich – a boutique hotel, restaurant and cookery school that is one of the country’s best places for an indulgent and cultural short break. Occupying two wings flanking the garden and entrance, the guest rooms are light and spacious and decorated in a classic-meets-contemporary style. Each one is different but all come with high-quality beds and linen, good wifi, flatscreen TVs and Bluetooth speakers. There’s a car park next door, and you can start the day with one of Richard’s superb breakfasts, served in the elegant ground-floor restaurant, where you can also enjoy a delicious afternoon tea. You couldn’t be in a better location for exploring central Norwich, which is literally on your doorstep. Best budget hotel: The Cliftonville Location: Cromer Situated right on top of the cliffs in resurgent Cromer, The Cliftonville is a landmark building that, until recently, was in need of a bit of TLC. Luckily for us, it has been renovated by the City Pub Company, which has turned The Cliftonville into an affordable and thoroughly up-to-date place to stay, just minutes from the town’s beach. Most of the rooms have sea views and it’s nice to know you can leave the car at home and come here by train from Norwich, leaving you free to focus on the seaside attractions of Cromer. The beach and the pier are right there, and there’s another beautiful beach at Overstrand, a short walk away, where you can enjoy crab sandwiches in the clifftop café. Alternatively, try the Cromer crab or some of Norfolk’s best fish and chips in No.1 or Mary Janes before following the Norfolk Coast Path to Sheringham, where you can sample some of the county’s best ice cream at Ellie’s. And the hotel? It’s an Edwardian gem – think sweeping staircases and stained-glass windows – that has been sensitively restored: it boasts a cosy bar; a contemporary restaurant that makes the most of the sea views and serves decent modern British food; and 30 guest rooms and suites with en-suite bathrooms, good wifi, flatscreen TVs and tea- and coffee-making facilities. Max Verstappen back to his best to claim pole position for sprint race
Max Verstappen bounced back from his mistake in qualifying for the United States Grand Prix to put his Red Bull on pole position for today’s sprint race. Verstappen will line up from only sixth place for Sunday’s main event at Austin’s Circuit of the Americas after his quickest lap was chalked off for exceeding track limits here on Friday night. But less than 24 hours later, the triple world champion atoned for his error to seal top spot ahead of Ferrari’s Charles Leclerc by 0.055 seconds for the 19-lap dash to the chequered flag later today. “The last lap was not great but we are still on pole so it shows the car is working well,” said Verstappen, with less than a tenth separating the top-three drivers. “It will be an exciting afternoon with cars close to each other so we don’t know what will happen in the sprint race. Normally in the race we are okay, but this track is demanding.” Lewis Hamilton finished third, seven hundredths behind Verstappen, with Lando Norris and Oscar Piastri fourth and fifth respectively for McLaren. George Russell qualified eighth. It was not all plain-sailing for Verstappen after he spun on the exit of Turn 9 in Q2. Verstappen took too much kerb on the entry to the left hander which sent him onto the grass and into a pirouette. But after he completed a 360-degree spin, Verstappen was able to make it back to his garage and into Q3. Hamilton also survived a hairy moment in the opening phase of qualifying when he nudged the back of Yuki Tsunoda’s AlphaTauri. “Check my front wing,” said Hamilton on the radio. “One of the drivers blocked me and we touched.” Hamilton was able to continue and although the stewards noted the incident, no further action was taken. Daniel Ricciardo, absent from the last five races with a broken hand, out-qualified Tsunoda to progress to Q2 and finish 11th. Tsunoda starts 19th, one place ahead of Logan Sargeant who propped up the order for the second day in a row at his home event. The sprint gets under way at 5pm local time (11pm BST). Jay-Z is more than just a father – he’s a style advisor too. The famed 53-year-old may not have gotten one of his daughter’s stamps of approval for his fashion sense in the past, but he has it now. In conversation with Gayle King on CBS Mornings, Jay-Z opened up about how Blue Ivy, 11, has warmed up to the idea of him being the “cool” dad. “She used to be frontin’ on me a little bit,” Jay-Z admitted. “But [now] I catch her. I catch her in the corner, you know? Grandmother with rare cancer that led to amputation shares first warning sign
A grandmother who was diagnosed with a rare cancerous tumour after her ankle “looked a bit swollen” had to have her leg amputated, but she is now walking with a prosthetic and has achieved her goal of waltzing again with her husband. Shirley Parnell, 75, a retired production coordinator, who lives in Kings Langley, Hertfordshire, with her husband, Lawrence, 76, a retired chartered surveyor, noticed a lump on her ankle in July 2022, and little did she know, it would lead to a devastating diagnosis. Shirley “assumed it would be something that (doctors) could fix”, but, after several scans, she was diagnosed with spindle cell sarcoma, a rare malignant cancerous tumour, and was told a leg amputation would be the only way forward. The mum of two and grandmother of two felt “shocked and in disbelief” as it “hadn’t even crossed (her) mind” that she was going to be diagnosed with cancer. After the surgery, Shirley had an “overwhelming sense of relief” and focused on getting better – to motivate herself, she set herself the goal of being able to dance with her husband again. But, while learning to walk again, Shirley was diagnosed with metastasis lung cancer and could not help but feel “a little bit cheated” as her parents lived until their 90s and she now knows “that’s probably not going to happen.” She did not let this get in the way of her achieving her goal, and in the middle June 2023, she danced with her husband again at a friend’s wedding and said she “had a real sense of achievement”. In July 2022, Shirley got her first warning sign of cancer when she experienced pain in her right ankle. Shirley told PA Real Life: “My ankle started to look a bit swollen – at first, I didn’t think anything of it as I assumed I had just knocked it on something in the house and not realised, but then I noticed a lump. “The lump kept moving around and the pain started to get more intense. So much so that I decided to go and see my local GP.” Shirley’s GP thought it could be a blood clot, so she was prescribed cream and tablets, but after a week, nothing improved. She was then referred to Watford General Hospital for a blood test and an X-ray. Shirley said: “I had just assumed it would be something that they could fix with some medication and the thought of something more serious didn’t really cross my mind. “It was only when they said that the X-ray had come back showing some abnormalities and they wanted me to have an MRI scan, a CT scan and a biopsy that I started to worry. “A few weeks went by, and I tried not to think about the results but then I got a call saying the results were back and they wanted to see me, and I just felt like it was going to be bad news.” At the appointment, Shirley was told she had spindle cell sarcoma, a rare malignant cancerous tumour which can develop in the bone or soft tissue. The doctor suggested that the only option for Shirley was to have her leg amputated to remove the tumour. She said: “As he said those words, I felt shocked and disbelief. “I thought at the time, only last week I was living my life normally, doing things I would come to take for granted such as walking to the shops or going to a Pilates class. “It hadn’t even crossed my mind that it might be cancer, let alone that I would lose a limb because of it.” So, on October 24 2022, at the Royal National Orthopaedic Hospital in Stanmore, Greater London, Shirley had the surgery. She said: “I was very nervous going into surgery but funnily enough I was okay once it was done. “I just had an overwhelming sense of relief that that part was finished. “Everyone has always said to me that I am a very determined person and after the surgery, I just started to look to the future as I felt everything was getting better, so I focused on working towards that.” But, once her leg was amputated, Shirley could not help but feel like she had lost some independence. She said: “Before I could just pop out to pick up some essentials but I had to rely on others to help me, something I am learning to get better at. “I’m so grateful for my husband running me around though.” On January 27 2023, Shirley had a cast made for her prosthetic leg, and it was fitted a week later. She said: “Then came the long and challenging journey of learning how to walk again. “The staff at the Prosthetic Rehabilitation Unit at the Royal National Orthopaedic Hospital were amazing and their support was what got me through those first few weeks and helped me get used to my new way of moving. “I felt strange but excited with my new leg – it felt like it was a real step forward into being more independent.” When in physiotherapy, Shirley made it her goal to be able to dance at her friend’s wedding with her husband. She said: “My husband and I always loved dancing – he joked that we’ll be doing a jive, but I said maybe a slow waltz.” But, at the end of April 2023, she was diagnosed with lung cancer. She said: “My parents lived until they were well into their 90s and I’ll be honest, I fully accepted with my family history that I would do the same. “So it came as a bit of a shock that I now know that that’s probably not going to happen. “I felt a little bit cheated, I suppose, but the other thing it has made me realise is that there are people a lot worse off than me.” Determined not to let the diagnosis impact her goal, Shirley practised walking even more, and at the middle June 2023, they danced together at the wedding. She said: “It was wonderful, I had a real sense of achievement, and being able to have a few dances during the evening was wonderful. “My husband was really proud of me too. “My family have been unbelievably supportive, I can’t thank them enough. “They were so happy for me that day.” Now, Shirley remains under the hospital’s care, having regular scans, and has since passed her driving assistance test. She is also raising money for the Royal National Orthopaedic Hospital Charity for its Impossible Possible campaign.
