Quick, moist and flavourful: Jurgen Krauss’s marble cake
This cake was a standard on our Sunday coffee table and has a lot of nostalgia for me. It is quick to make, moist and flavourful, and the marble pattern was always fascinating to me as a child,” says former contestant on The Great British Bake Off, Jurgen Krauss. Marble cake Serves: 12-24, depending on tin size. The amounts given are for a loaf tin (950g) or a Bundt tin. For a bigger Bundt tin, double the amounts and bake for 15 minutes longer. Ingredients: For the batter: 125g unsalted butter or margarine, room temperature 2 tsp vanilla extract 2 eggs, separated 180g caster sugar 250g plain flour 8g baking powder 125ml whole milk For the chocolate batter: 10g cocoa powder 15g caster sugar 25ml double cream ¼ tsp ground cloves Method: 1. Preheat the oven to 170C fan/gas mark 5. 2. Put the butter in a bowl and, using a hand mixer or a stand mixer fitted with the balloon whisk, beat the butter until it is light and pale. Add the vanilla extract and egg yolks, alternating with the sugar bit by bit, and whisk for another 15 minutes until the butter and sugar mix is very frothy and white. 3. Sift the flour and baking powder together in a bowl. Alternate adding the flour and milk bit by bit to the batter while whisking on a low speed. 4. In a separate bowl, whisk the egg whites to soft peaks. Fold the egg whites into the butter and flour mixture. 5. For the chocolate batter, take one third of the plain batter and put it into a separate bowl. Fold in the ingredients for the chocolate batter. Put the two batters in a greased 950g Bundt tin or a loaf tin, starting with the vanilla batter, then add a layer of chocolate batter and finish with vanilla batter. Use a fork to create the marble effect by pulling it through the layers of batter with a swirling motion. Bake for about one hour; the cake should start separating from the tin and a skewer inserted into the cake should come out clean. Cover with foil if the top of the cake starts getting too dark. 6. Leave the cake to cool in the tin for at least 20 minutes before attempting to take it out of the tin. 7. 'Upset' vegan family write note to neighbour who was making them 'feel sick'
Australian Facebook is up in arms over a letter from an "upset" vegan. Someone from Perth, received a letter from a vegan neighbour complaining about the meaty smells emanating from her kitchen. "My family are vegan (we eat only plant-based foods) and the smell of the meat you cook makes us feel sick and upset. We would appreciate your understanding. Thanks, Sarah, Wayne and kids." But people were divided about whether the request was reasonable or not after the note circulated on Facebook. One said: "I feel like this was a genuinely polite letter, and it’s true to smell of meat is overpowering. It would be nice to see some respect for your neighbours, and not publicly trying to shame them for holding strong ethical morals." "This is the like the nicest way they could possibly ask," another said. "What is wrong with some people?! They’re simply asking for a different window to be open that isn’t adjacent to their home. Men who cycle, jog or swim could cut risk of nine cancers – study
Male joggers, swimmers and cyclists could be cutting their risk of nine cancers, a new study suggests. Researchers found that men with good cardiorespiratory fitness are far less likely to go on to develop cancers of the head and neck, stomach, pancreas, liver, bowel, rectum, kidney, lung and oesophagus. Cardiorespiratory fitness refers to a person’s ability to do aerobic exercise, such as running, cycling and swimming for sustained periods, or even to climb stairs. The new study, published in the British Journal of Sports Medicine, saw experts from Sweden track just over a million men for an average of 33 years. The men involved in the study were conscripted to military service in Sweden between 1968 and 2005. At the start of their conscription the men underwent a battery of tests assessing a number of factors including their height, weight, blood pressure, muscle strength and cardiorespiratory fitness. During the follow-up period, about 84,000 developed cancer. Researchers found that, compared with those with low cardiorespiratory fitness, men with a higher level of cardiorespiratory fitness were: – 19% less likely to develop head and neck cancer.– 39% less likely to develop cancer of the oesophagus (food pipe).– 21% less likely to develop stomach cancer.– 40% less likely to have liver cancer.– 18% less likely to develop bowel cancer and 5% less likely to develop cancer of the rectum– 20% less likely to develop kidney cancer.– 42% less likely to develop lung cancer.– 12% less likely to develop pancreatic cancer. “These results could be used in public health policymaking, further strengthening the incentive for promoting interventions aimed at increasing [cardiorespiratory fitness] in youth,” the authors wrote. The researchers did find that higher cardiorespiratory fitness was linked to a slight (7%) increased risk of prostate cancer and a 31% increased risk of skin cancer. A previous study examining the same data set suggested the slight increase in risk for prostate cancer was not linked to a higher rate of aggressive prostate cancer or prostate cancer death, and could be attributable to increased screening. The authors suggested a higher skin cancer rate could be explained due to “higher UV exposure”.
