Michelin-starred chef David Chang has poured cold water on the idea that grilling burgers on a barbecue is the optimum way to cook them. The founder of Momofuku Ko, which has two Michelin stars, said that barbecuing patties only serves to turn them into “carbonised crap”, but people keep cooking them like this because of the socialising that is associated with cooking outdoors. On his podcast The Dave Chang Show, the controversial chef suggested that using a griddle to cook burgers is a superior method. Chang, 45, said: “Grills suck for burgers. We have assumed as a culture that in summer, we eat a burger and it’s grilled. “I actually think the grill is a horrible thing for the burger… I think this viewpoint could get me in trouble,” he admitted, but pressed on with his argument against the grill. “The success rate of the griddle is better than the grill, and also there’s no clean up, you have nothing to worry about.” The Korean-American restaurateur continued: “A juicy burger is going to turn into a guaranteed grease fire [on a barbecue], why use it? This whole idea of imparting flavour from the grill, the only flavour that’s being imparted is the carbonised crap that’s on it. “You would need to cook a burger over charcoal for 12 hours to get that smoky flavour. “A backyard burger is an experience that you try to convince yourself is better than it actually is,” he claimed. “It’s the nostalgia, it’s the smells, it’s your friends. But if you actually take it out of the context, it’s not that good.” Chang went on to allege that the close relationship between burgers and grills “is a marketing lie”. “How many places where you think have a good burger, cook it on a grill?” he challenged. However, he did have some praise for barbecued foods. Chang said that grilling corn was “clearly the only champion” and he “can’t think of anything else” that makes corn taste quite as good. Chang has previously shared his opinions on burgers that landed him in trouble. In 2015, he provoked the ire of Australians when he wrote in his blog Lucky Peach: “You know who f***s up burgers more than anyone else in the world. Australians. Australia has no idea what a burger is. “They put a fried egg on their burger. They put canned beetroot on it, like a wedge of it. I am not joking you. This is how they eat their burger.” He also laid waste to the use of wagyu – beef that comes from cattle that is bred in Japan and is highly prized for its marbled fat content – in burgers. In his “burger manifesto”, Chang wrote that it was “the dumbest burger in the world” to use wagyu. “It’s like 70 per cent fat content – it’s disgusting. Would you eat a ground bacon burger? That’s what you’re doing with a wagyu burger,” he said. “Or the idiots that have ‘kobe beef wagyu sliders with a trio of ketchup’ on their menu – that drives me insane.” The chef is also known for speaking candidly about his toxic behaviour while working in kitchens in the past. In his 2020 memoir Eat a Peach, Chang wrote: “When I’m angry, I seethe with such intensity that it can’t simply be emotional. It’s like I’m an animal registering danger.” Hannah Selinger, an award-nominated journalist, wrote in her essay for Eater that “in all my years of restaurant work, I had never seen anything like the roiling, red-faced, screaming, pulsing, wrath-filled man that was David Chang”. She worked as corporate beverage manager at the Momofuku restaurant group in 2008. Chang responded to Selinger’s essay and said that while he didn’t recall specific incidents mentioned by her, “they are entirely consistent with my behaviour at the time, which I did not begin to correct until several years later”. He added that “the bottom line is that I’m sorry”. Apart from his podcast, Chang also hosted Netflix’s travel and food series Ugly Delicious from 2018 to 2020. Rebecca Adlington has said she’s “truly heartbroken” as the British swimmer announced she had a miscarriage at 20 weeks pregnant. Adlington, 34, said she went for her 20-week scan earlier this week and was informed her baby had no heartbeat, adding she and husband Andy Parsons, 31, “will forever love and remember” their daughter. She wrote on Instagram: “I don’t really have the words right now but unfortunately we went for our 20-week scan this week and they discovered no heart beat [sic].” Adlington added that she gave birth to the baby – who the couple named Harper – on Friday (20 October) and “we held her, and had time with her”. The two-time Olympic gold medallist thanked the staff at the Wythenshaw hospital in Manchester for their “incredible” kindness and care, and Parsons for his “selfless support, love, and help”. “I don’t have the strength or words right now and don’t feel ready to share this news,” Adlington continued. “However, I can’t pretend to be okay or fake a smile. I can’t have people ask me how pregnancy is or when I am due as I still look pregnant. I don’t have the strength to tell this news individually.” The former I’m a Celebrity contestant announced she was pregnant on 1 October, sharing a photograph of her family taken at Disneyland Paris. Former track athletes Dame Jessica Ennis-Hill and Greg Rutherford, ex-hockey player Sam Quek, former swim champion Adam Peaty, and presenters Angellica Bell and Helen Skelton shared messages of support in the comments section of Adlington’s Instagram post. Ennis-Hill wrote: “Oh Becky I’m sending you and your family so much love. I’m so sorry xxxx.” Rutherford said: “Sending love to you. So sorry to read this Becky xx.” Quek also wrote: “Becky, I know no words will ease the pain… my entire heart is with you all.” Peaty’s message read: “I’m so sorry to hear this, my prayers are with you all” alongside a heart and praying hand emoji. Adlington previously revealed she had a miscarriage 12 weeks into her pregnancy last August, sharing the news on Instagram at the time. The mother-of-two wrote: “It’s such a devastating time but important in times like these we remember we aren’t alone and have so much support. “Long way to go but I’m in the right place,” she added. “Once I’m able to leave hospital I’m extremely grateful I get to go home and give my 2 little ones the best hugs!” Adlington, who has also appeared on Celebrity MasterChef, shares one son, Albie, two, with Parsons. Formula One bosses were dealt a hugely embarrassing blow after first practice for the Las Vegas Grand Prix was cancelled. The running under the lights of the Las Vegas strip was suspended when Carlos Sainz broke down in his Ferrari with just eight minutes on the clock. And then 11 minutes later, at 8:49pm local time, it was announced the session would not be resumed – it emerged Sainz’s failure was caused by a loose manhole cover. Television replays showed Sainz being jolted in his cockpit as the cover struck the underneath of his machine as he approached 200mph on the Las Vegas Boulevard. Esteban Ocon also smashed into the debris – against the backdrop of Caesars Palace, Bellagio and Venetian hotels – causing significant damage to his Alpine. Ferrari described the damage to Sainz’s car as “extensive”, while Alpine said Ocon will require a new chassis. Ferrari team principal Frederic Masseur said: “He (Sainz) said I hit something on track, and he didn’t know what it was. It is just unacceptable for F1.” An FIA spokesperson said: “Following an inspection, a concrete frame around a manhole cover has failed. “We now need to check all of the other manhole covers which will take some time. “We will be discussing with the local circuit engineering team about the length of time it will take to resolve and we will update with any resultant changes to the schedule.” Second practice is due to begin at midnight local time (8:00 GMT). But there are significant doubts if there will be any running today at the 3.8-mile temporary street venue. Speaking on Sky Sports, the highly-respected TV pundit and former driver Martin Brundle, said: “That’s it for today from my experience. “Fixing that and checking everything else, letting it dry and making sure it won’t come out again is going to be a big job. “Theoretically, they are going to re-open the Strip (for public use) after the F1 practice sessions. That is a very, very big issue if there are other areas like that around the track.” The problems of loose manhole covers at street venues is not a new one in the sport. Jenson Button struck a dislodged drain in practice in Monaco in 2016, while George Russell also ran over a drain cover in Azerbaijan four years ago. Red Bull team principal Christian Horner said on Sky: “It’s a shame that we are not allowed on track. “They are going to have to check all the manhole covers and weld them or do something because you can see the damage that it has done. “It’s a great shame for the fans but safety comes first. We have got to get this right and hopefully it won’t take too long.” The cancellation of opening practice comes 24 hours after triple world champion criticised the staging of the Las Vegas Grand Prix – the first here in four decades and maiden event on the strip – as “99 per cent show, and one per cent sport”.
