Gumbo is a Louisiana institution. Fusing together flavours from the state’s Creole and Cajun heritage, it’s traditionally a deeply-flavoured stew. After exploring southern Louisiana, this is Gordon Ramsay’s version of a traditional gumbo… Chicken andouille gumbo with rice Serves: 8 Ingredients: For the braised chicken: 4 boneless, skin-on chicken breasts 4 bone-in, skin-on chicken legs, thighs attached 1 tsp freshly ground black pepper 2½ tsp kosher salt, divided 2 tbsp grapeseed oil 4 garlic cloves, crushed 3 celery stalks, diced 2 yellow onions, diced 8 cups chicken stock 3 sprigs thyme 3 spring onions, trimmed and chopped 1 lemon, cut in half, seeds removed For the gumbo base: 227g andouille sausage, cut into 1.3cm-thick slices 108g unsalted butter 125g all-purpose flour 2 celery stalks, finely diced 2 garlic cloves, minced 1 red bell pepper, finely diced 1 green bell pepper, finely diced 1 yellow onion, finely diced 1 tsp kosher salt 1 tsp cayenne pepper ½ tsp freshly ground black pepper 2 tbsp hot sauce For the rice: 341g white rice 946ml water 2 sprigs thyme, picked 2 tsp kosher salt Method: 1. Make the braised chicken: Season the chicken with the pepper and two teaspoons of the salt. In a large pot over medium heat, add the oil. Once the oil is shimmering, sear the chicken on all sides until golden brown, about 10 minutes. Be careful not to overcrowd the pan, and work in batches if necessary. 2. Remove the chicken from the pan and add the garlic, celery, and onions. Cook in the chicken fat until the vegetables begin to caramelise. Season with the remaining salt. 3. Add the chicken back to the pot and cover with the chicken stock. Add the thyme, scallions, and lemon halves and bring to a simmer. Continue cooking on a low heat until the chicken is tender and can easily be pulled apart, about one hour. 4. Remove the chicken from the stock and shred the meat from the bones. Cover the chicken and refrigerate until ready to use. Strain and reserve the chicken stock and discard the vegetables and thyme. 5. Make the gumbo base: In another large pot over a medium heat, add the andouille sausage and cook until the fat has rendered and the sausage has crisped. 6. Use a slotted spoon to remove the sausage from the pot and set aside on a paper towel–lined plate. 7. To the fat in the pot, add the butter. Once the butter is completely melted, add the flour and mix until a thick paste forms to make a roux. Reduce the heat to medium-low and continue cooking, stirring constantly until the roux has turned a very deep brown, about 30 to 45 minutes. 8. Add the celery, garlic, bell peppers, and onion. Continue cooking until the vegetables are softened, about five minutes. Season with the salt, cayenne, and black pepper. 9. Add the reserved chicken stock and the hot sauce and bring to a simmer. Continue cooking on low until the gumbo base has thickened, about 30 minutes. 10. Make the rice: In a medium pot over a medium heat, add the rice, water, thyme and salt and bring to a boil. Cover and reduce to a simmer. Cook until all the moisture has evaporated, about 20 minutes. Fluff the rice with a fork just before serving. 11. Add the pulled chicken and andouille sausage to the gumbo and serve with the rice. Rita Moreno has revealed the unique way she made friends after finding herself suffering from loneliness. Ahead of her 92nd birthday on 11 December, the West Side Story star opened up about her struggles with loneliness after she moved into a new home. In an interview with People published 28 November, Moreno recalled feeling “so sad” after moving from her house in California’s Berkeley Hills area to a new condominium. The Broadway alum admitted she felt so lonely that it was even “affecting [her] appetite”. It wasn’t until her daughter, jewellerly designer Fernanda Luisa Gordon, noticed something was wrong that Moreno decided to combat her loneliness. “I really didn’t understand what was happening,” she told the outlet. “I remember thinking: ‘I can’t go on like this.’ I’m in the most beautiful apartment in the world as far as I’m concerned, and this is happening. Why is this happening?” The 80 For Brady star said she used her years of “therapy” and “psychotherapy” to help her self-reflect, ultimately deciding that it was her recent move away from friends and family that was making her unhappy. Moreno, who has one daughter and two grandsons, explained that her new home made it difficult for her friends and family to visit. “So when we make plans to see each other, we have to make plans, they can’t just kind of drop by,” she said. “I was really lonely.” Moreno admitted that she was “fascinated” when it dawned on her that she didn’t actually know how to make friends because she “never had to seek people’s company”. “You know why? Because people have always come to me,” she added. When the Family Switch star finally decided to “meet some people” on her own, she went to the supermarket to do some shopping and met a “lovely” woman who she had previously seen at the store. “She had this big smile on her face and she recognised me, obviously, and we started to talk,” Moreno recalled. “I said to her: ‘Would you like to have lunch with me?’” According to Moreno, the woman was shocked when the Hollywood icon asked to have lunch with her but she ended up accepting the invite. “She sat down and she said: ‘Do you always pick people up like this in the market?’” Moreno recounted. “I told her the truth. I said: ‘No, but you always have struck me as such a lovely person. Since I’m new here and I don’t know anybody, I thought I’d take a dip.’” Since then, the woman has become one of many people that Moreno befriended, including those from her apartment building. “I’m so lucky,” she added. The Puerto Rican actor landed her breakout role of Anita in the 1961 movie musical adaptation of Leonard Bernstein and Stephen Sondheim’s original Broadway musical, West Side Story. She later won the Academy Award for Best Supporting Actress for the role. Moreno also starred as a newly-created character, Valentina, in director Steven Spielberg’s version of West Side Story. In 1965, she married cardiologist Leonard Gordon, who later became her manager. They were married for 45 years, welcoming daughter Fernanda, before his death in 2010. In May, United States surgeon general Dr Vivek Murthy declared loneliness a public health epidemic, posing health risks as deadly as smoking a dozen cigarettes daily. In a report, Murthy stated that nearly half of US adults say they’ve experienced loneliness. The report also stated that loneliness can increase the risk of premature death by nearly 30 per cent, posing a greater risk of stroke and heart disease, as well as increasing a person’s likelihood for experiencing depression, anxiety, and dementia. The crisis was worsened due to the Covid-19 pandemic, as schools and workplaces shut down and people were required to quarantine and socially distance themselves. In 2020, Americans spent about 20 minutes a day in person with friends compared to 60 minutes daily just two decades earlier. “We now know that loneliness is a common feeling that many people experience. It’s like hunger or thirst. It’s a feeling the body sends us when something we need for survival is missing,” Murthy told The Associated Press in an interview. “Millions of people in America are struggling in the shadows, and that’s not right. McDonald’s and Crocs are joining forces to make spicy shoes inspired by the fast-food chain’s animated characters. In partnership with the notable footwear company, the popular creator of the mouthwatering McFlurry is releasing four limited-edition sandals available on 14 November. The special collection will feature three traditional Crocs alongside slip-ons in the brand’s colour scheme (red and yellow) as well as options made to look like Grimace, Hamburglar, and Birdie. “McDonald’s and Crocs are introducing their first-ever collab. Inspired by both Crocs Stars and Mickey D’s loyalists, the collab will drop with a full line of shoes, socks and Jibbitz charms beginning tomorrow in countries around the world,” Crocs announced in its press release, adding that the collection will go live midday. “From a Classic Clog with a McDonald’s spin to a throwback, limited-edition collection inspired by iconic McDonald’s characters – Grimace, Birdie and Hamburglar – the new shoes are designed to give consumers a way to live out their bold fandom every day,” it continued. A layer of potent purple fur will line the inside of the Grimace sandals, while the outer rubber straps will feature the footwear brand’s iconic punctured holes to place themed Jibbitz in. Meanwhile, the Birdie design will be adorned with plastic pink bows, her white goggles, and matching insoles. Then, in true Hamburglar fashion, the Crocs will be detailed with black and white strips, popout masked eyes, and yellow soles. While the McDonald’s and Crocs collaboration is certainly a tasty treat, the humourous line follows the shoe company’s edgy drop a little over a month ago. On 5 October, Crocs fused a Western aesthetic with dark grunge to come up with its very own cowboy boot. The “foul” shoe was lengthy yet bendable, with two spurs lining the faux leather shaft. Careful stitching and a textured vamp mirrored a classic cowboy boot but was still reminiscent of the brand’s love for funky design. These $120 boots, made in accordance with “Croctober,” the time of year when the brand releases a new style, riled up fans online, eager customers debating harsh critics over the inventiveness and look of the spongy boots. “Why...why do I not hate these?” one person questioned, while another said: “Crocs released cowboy boots.
