The dish that defines me: Michele Pascarella’s Neapolitan ragu
Defining Dishes is an IndyEats column that explores the significance of food at key moments in our lives. From recipes that have been passed down for generations, to flavours that hold a special place in our hearts, food shapes every part of our lives in ways we might not have ever imagined. I was very young when I started working in a local pizzeria in Caserta, the city near Naples where I grew up. I was 11 years old when I started working there, and stayed on for about eight years before moving to London to start my own business. But during my teenage years, one of the best memories I have is waking up to the smell of my mother’s ragu on Sundays. Neapolitan ragu is a specialty in the region, and we are very proud of it. It’s one of the two most famous varieties of ragu, the other being ragu bolognese, and uses whole chunks of beef and pork rather than ground meat. It must be cooked for a long time over a low heat, for at least eight hours, preferably 10 hours. My mother would get up at 5am to start making hers and it would continue to simmer slowly until the family is ready to eat in the afternoon. Sundays are special because it’s a time for the whole family, including our extended family, to come together and eat at the same table. My family comprised of my parents, my three siblings and myself, and we would usually be joined by my grandparents, aunts, uncles, cousins. We usually had anywhere between 15 to 20 people gathering on Sunday afternoons. It didn’t matter what commitments you had – on Sunday, you have to sit at the table with family. It’s the most important day of the week for us. The ragu is the dish that, for me, brings everything together: passion, love, happiness and strong ties with family. Because I worked late shifts often, I would wake up really late on Sundays, around 11am or 12pm. So by the time I wake up, the beautiful aroma of the ragu that has been cooking since 5am will have filled the whole house. I would wake up so hungry. My breakfast on these days would simply be a hunk of bread, torn and dipped straight into the still-simmering sauce, with some parmigiano reggiano sprinkled on top to help cool it down. Every family has their own way of eating ragu. You can dip bread in it, like I did for breakfast, but it is most commonly eaten with pasta. Some people have it with gnocchi while others might use a short pasta or spaghetti. But it does have to be a robust pasta shape, you can’t have ragu with a really small pasta, or it won’t stand up to the sauce. No one makes ragu like my mother’s. I could go to any restaurant, even those with Michelin stars, and it wouldn’t come anywhere close to hers. I strongly believe her secret ingredient is just her love for cooking for her children, as the dish needs that passion to make it taste so good. I never woke up at 5am to try and make it with her, it was so hard when I was a teenager! But when I did start to learn how to make it, it was very difficult to get up that early. I don’t know how she did it for so many years. In my restaurant, Napoli on the Road, I make a pizza with the slow-cooked ragu as a topping, along with a parmigiano reggiano cream. I call it Ricordi D’infanzia, which translates to “childhood memories” because it holds such strong nostalgia for me. But I still can’t make it like my mother does. When I go home to Caserta to see my family, I do try to wake up at 5am to make it with her. I’m less stressed about work when I’m there so I can usually do it, but when I’m back in London it’s hard to get up at that hour when you finish at midnight at the restaurant. Like most mothers who pass down their recipes, there are no accurate measurements to my mother’s ragu. Sometimes they put some sort of secret ingredient inside and won’t tell you. But I have learnt that you need to be flexible about it, depending on what ingredients are available to you. For example, maybe the tomatoes you buy from the market are too acidic. My mother fixes this by putting a whole potato in the sauce, because its starchiness will help to remove the acidity from the tomatoes. Or, she might add sugar to the sauce to mellow it out. It can be tricky to get it right, so I can only try my best to do better than my mother, but it is hard. I think I will be 80 or 90 years old before I perfect my own version! I’ve lived in London for almost 20 years, but I still miss those Sunday afternoons spent with my family at my uncle’s or grandfather’s house. In London, things are very fast-paced and rushed, you don’t really have time to sit down with people. I try to go back every couple of months, and I really look forward to it. My mother still makes her ragu. Even though nowadays it’s harder to get everyone together, we do our best to keep everyone united. I don’t have any family in London, so it’s important to me to keep that tradition alive when I go home. My dad has never visited me here because he is afraid of flying, but my mother comes fairly often and I’ll make ragu for her when she does. She never says anything bad about it – although, she will tell people: “It’s good… but it can be improved.” Still, I’m glad I have the opportunity to make it for her sometimes and it keeps me connected to home. Social media firms should reimburse online purchase scam victims – Barclays
Tech companies should help to reimburse the victims of social media purchase scams, bosses at Barclays have said. It comes as data from the bank revealed a jump in the number of social media scams affecting British shoppers. Purchase scams, where people buy good which never arrive or are not as advertised, now account for two thirds of all reported scams, according to the research. Barclays said that 88% of these scams, which cause victims to lose £1,000 on average, start on social media platforms. The bank has called for more to be done in order to prevent these scams, demanding further action from social media companies and politicians. It has called for a victim reimbursement fund to be financed by all firms whose systems and platforms are used to perpetrate scams, including tech companies and banks, as part of four recommendations. Currently victims are only reimbursed by funding from banks, Barclays said. The banking giant also called for the creation of a cross-Government group within the Home Office to deal with the issue in order to coordinate regulators, policy makers, industry groups, and companies across different sectors. The prevention of scams should also be made mandatory, particularly for tech companies, in a shift from current voluntary measures, it added. Barclays also urged the Government to make organisations publish their scams data in order to inform consumers of the risks involved in using their platforms. Friday’s first practice session in Abu Dhabi was an intriguing watch. On a weekend which is alarmingly lacking much intrigue, exactly half the grid were absent. Substituted in their place were 10 “rookie” drivers, as part of F1’s mandatory young drivers programme introduced last year. One driver, and more so how they performed, amplified one of the sport’s most peculiar issues – and one where a solution could amp up the closing races of the season. It is one of the FIA’s – the sport’s governing body – most peculiar rules that the Formula 2 champion can’t compete in the series again. Such a regulation would imply that there is a ready-made pathway to F1 for the winner, but this is not the case. For 2022 champion Felipe Drugovich, a second year in a row begrudgingly watching from the sidelines beckons next season. A shame because (who’d have thought it), he’s actually pretty fast. In FP1 on Friday, Drugovich recorded the second-quickest lap on the timesheet. Most notably, the Brazilian was almost three-tenths quicker than Lance Stroll in the other Aston Martin car. While it was indeed practice – with drivers and teams generally on different run plans throughout the weekend – the pace was still notably significant. Yet while F1 remains a 10-team-20-driver sport, the obstructions for junior drivers with much promise but no established route to the top table will remain. But what if there was a very genuine incentive to win Formula 2? What if those grappling for points at the bottom of the F1 standings had their future on the line? Because title-runaways happen, in all sports. Manchester City have won five of the last six Premier League titles; two of those have been at a canter. Just ask German football fans about the simplistic boredom of the Bundesliga title race; Bayern Munich have won 10 in a row. But the end-of-season battles in football rarely stop at the top. The top six spots are incentivised with European football, while those down at the bottom frantically try to escape the clutches of relegation. F1 is, of course, a different beast. All 10 teams are entities in their own right with the two driver spots their most prized assets. As such, team principals understandably want full reign on who to pick and how long to pick them for. And this simple model is not about to change anytime soon. But, just for a moment, have a bit of fun and consider the extra spice of an alternative reality this weekend. Ignoring Nyck de Vries who was dropped from AlphaTauri after 10 races in July, Logan Sargeant is currently bottom of the charts with one point. Liam Lawson, who raced five times due to Daniel Ricciardo’s injury, has two points. Haas’ Kevin Magnussen is on three points, with Zhou Guanyu and Ricciardo ahead of him on six. Meanwhile, the Formula 2 season also concludes this weekend. Alfa Romeo reserve Theo Pouchaire leads by 25 points to Mercedes junior Frederik Vesti. Aside from your motorsport die-hards, the sport’s main support series rarely entices viewers on television. Does it really matter, especially when you’re unintentionally punished by claiming the title with, most likely, a year to follow without racing? It happened to Oscar Piastri in 2022; he had to play the game behind-the-scenes to land a seat at McLaren this year, with his impressive performances indicative of the talent coming up from the higher echelons of Formula 2. It’s happening now to Drugovich – and is set to happen to Pourchaire next year. Yet imagine if a guaranteed spot in F1 was the carrot. Imagine if Sargeant had to somehow land a top-10 finish in the 22nd and final race at the Yas Marina Circuit to keep his seat at Williams. There could be ramifications for Magnussen’s poor year at Haas but, suitably scarred by the years of Mick Schumacher and Nikita Mazepin, Guenther Steiner said in the summer: “I don’t want to take any risk in this moment. You can take a risk if the risk is worthwhile to take. And in this moment, we want stability.” Of course, it’s not realistic. Such a procedure would open up F1 to all sorts of issues. For example, George Russell finished bottom in 2019, simply handicapped with the worst car on the grid at Williams despite his obvious talent. The junior programmes most drivers are in would suddenly be negated. Teams would bend the rules, on and off track, in order to carve their route to the chosen driver. But boy would the basic relegation-promotion principle make the season finale spectacle engrossing. While the teams can keep motivation high with financial rewards for higher spots in the championship, the generic sporting fan is not bothered about that. In the last six Abu Dhabi race meets (including this year’s), only one has had a title riding on it with Verstappen’s controversial and thrilling win over Hamilton in 2021. For a sport with peak popularity in the Drive to Survive era, the end-of-season no-contest is a shortcoming.
