If you are after simple, filling meals that require very little washing up… you are in the right place. As part of our Budget Bites column – where we’ve teamed up with Sorted Food to bring you easy, affordable, quick and (most importantly) tasty recipes once a month – we’ve brought you three one-pan dishes that maximise on taste, and minimise on mess. They also make the most of your staple ingredients while keeping your fresh shopping list minimal. We’ve also provided a handy shopping list for the ingredients (though hopefully most of it will be knocking about already), which are used across all recipes to ensure minimal food waste. You just need to decide where to shop, whether it’s locally or online. Shopping list 3 clove garlic 1 small butternut squash 2 lemons 200g fresh spinach 10g fresh basil 1 aubergine 200g cherry tomatoes 20g fresh basil 1 small broccoli 250g mascarpone 50g hard Italian cheese 280g extra firm tofu 50g black olives 2 tbsp capers 500g pre-cooked gnocchi 150g couscous 200g orzo Olive oil 1 vegetable stock cube cube Roast broccoli and orzo traybake This recipe also works well with diced courgette instead of broccoli. Serves: 2 Ingredients: 4 tbsp olive oil 1 broccoli (small) 200g orzo 2 cloves garlic 1 vegetable stock cube cube 100g mascarpone 1 lemon Method: 1. Preheat the oven to 220C, then fill the kettle with water and get it on to boil - this will be for the tray bake. 2. Cut small florets from the stalk of 1 small head of broccoli. Finely mince the stalk. 3. Toss the prepped broccoli with 2 tbsp of oil and a generous pinch of salt in a large roasting tray. Spread it out into 1 even layer. 4. Roast for 10-12 minutes, until golden in places. Crack on with a bit of washing up while you wait. 5. Once the broccoli is ready, add 200g of orzo to the tray, then finely grate in 2 peeled cloves of garlic. 6. Crumble over 1 stock cube, tip in 500ml of boiling water, give everything a quick stir, and cover with tin foil tightly. 7. Bake for 12-15 minutes, until the orzo is nearly soft and most of the liquid has been absorbed. 8. Once the orzo is nearly soft and nearly all the water has been absorbed, remove the foil and bake again for 5-6 minutes, until the orzo is soft and all the liquid has been absorbed. 9. Give the orzo a quick stir once ready, and season to taste with salt and pepper. 10. Add blobs from 100g of mascarpone, then finely grate over the zest from 1 lemon and squeeze over its juice. Drizzle over the remaining 2 tbsp of oil and serve. One-tray tofu caponata-style couscous If you aren’t a tofu fan, feel free to sub it out for another aubergine. Serves: 2 Ingredients: 280g extra firm tofu 1 aubergine 5 tbsp olive oil 200g cherry tomatoes 20g fresh basil 1 clove garlic 150g couscous 50g black olives 2 tbsp capers Method: 1. Preheat the oven to 220C - this will be for the tray bake later. 2. Cut 1 280g block of tofu into around 9-12 bite-sized chunks, then remove the green stalk from 1aubergine and cut the flesh into similar-sized chunks. 3. Toss the tofu and aubergine with 3 tbsp of oil and a generous pinch of salt in a large roasting tray. Spread everything out into 1 even layer. 4. Roast for 10-12 minutes, until golden in places. Get on with the rest of the dish in the next steps while you wait. 5. Add 200g of cherry tomatoes to a large measuring jug, along with 20g of basil, 1 peeled clove of garlic, 2 tbsp of oil, and a generous pinch of salt. 6. Blitz with a hand blender, until smooth - we will use this to cook the couscous in the next steps. 7. Once the tofu and aubergine are ready. Add 150g of couscous to the tray along with the cherry tomato broth. Give everything a quick stir and spread into 1 even layer. 8. Cover the tray tightly with tin foil. 9. Return to the oven and bake for 8-10 minutes, until the grains of couscous are soft and have absorbed all the liquid. Get on with the rest of the dish in the next steps while you wait. 10. Slice 50g of pitted olives crossways. Crack on with a bit of washing up while you wait for the couscous. 11. Once the couscous is ready, uncover the tray, and fluff the grains with a fork. Top with the olives, 2 tbsp of capers, and serve. Creamy roast squash gnocchi traybake If you can’t get your hands on mascarpone, try making this recipe with cream cheese instead. Serves: 2 Ingredients: 1 butternut squash (small) 3 tbsp olive oil 150g mascarpone 1 lemon 500g pre-cooked gnocchi 200g fresh spinach 50g hard Italian cheese 10g fresh basil Method: 1. Preheat the oven to 220C - this will be for the squash in the next steps. 2. Peel 1 small squash, cut it in half lengthways, scoop the seeds from the centre, then cut the flesh into bite-sized chunks. 3. Toss the chunks with 3 tbsp of oil and a generous pinch of salt in a large roasting tray. Spread everything out into 1 even layer in the tray. 4. Roast for 20-25 minutes, until completely soft and golden in places. Crack on with a bit of washing up while you wait. 5. Once the squash is ready, add 150g of mascarpone to the tray. Finely grate over the zest from 1 lemon, squeeze in its juice, then mash everything together with a potato masher until semi-smooth. Season to taste with salt and pepper. 6. Add 500g of gnocchi to the tray along with 200g of spinach. Give everything a good mix, then spread out into 1 even layer. 7. Finely grate over 50g of cheese. 8. Bake for 10-12 minutes, until golden, bubbling, and piping hot. Get on with the rest of the washing up while you wait. 9. Mix, top with leaves from 10g of basil, and serve straight from the tray! The music producer, 38, and The Maid star, 29, tied the knot during a wedding ceremony in New Jersey, which was attended by a number of star-studded guests. Among the guest list included Channing Tatum, Zoe Kravitz, Cara Delevingne, and Taylor Swift - who drew a large swarm of fans outside the rehearsal dinner venue in Long Beach Island. Another famous face spotted at the nuptials was Antonoff’s longtime collaborator Lana Del Rey, who wore a pink-and-white mini dress with pink platform slides to the ceremony. The white, lace dress featured small, pink flowers with a halter neckline. She paired the outfit with a white cardigan, Lemon Jelly platform sandals, and a baby blue Prada handbag. While the “Video Games” singer’s outfit choice may have been summer-ready, many fans on social media pointed out how guests should never wear white to a wedding, as the colour is strictly reserved for the bride. “Why is she wearing white???” one person asked on X, formally known as Twitter. “Now why did she wear white to a wedding,” another fan pointed out. A third person wrote: “I get these people are celebrities but like wtf you don’t wear white or anything close to white at a wedding???????” However, other fans were unbothered by Del Rey’s casual wedding fashion choice, as they jokingly tweeted: “I love Lana because she’s a hot famous person who also looks like someone who works at Target.” “Deeply obsessed with Lana’s wedding vibes,” another said. “I’d let her wear white to my wedding,” tweeted someone else. Typically, wedding guests should choose a colour other than white to a wedding as a way to avoid upstaging the bride’s white wedding dress. However, according to the Emily Post Institute, it can be acceptable to wear white, as long as it doesn’t distract from the bride or her bridesmaids’ dresses. Antonoff and Qualley tied the knot on Saturday (19 August) at Parker’s Garage and Oyster Saloon on Long Beach Island after nearly two years of dating. The two announced their engagement in May 2022, two months after making their relationship public at the AFI Awards Luncheon in March that year. For the occasion, Qualley wore a white satin halter-neck dress with a plunging neckline and crystal detailing along its hem. The Once Upon A Time in Hollywood star also wore Mary Jane flats, and a long veil as she entered the venue. Meanwhile, Antonoff wore a black tuxedo. The bride’s mother, actor Andie MacDowell, attended the ceremony in a blue gown with a palm leaf pattern. Her ex-husband and Qualley’s father - Paul Qualley - was also in attendance, as well as her siblings - sister Rainey and brother Justin. Antonoff’s sister Rachel, a fashion designer, attended the ceremony too. Swift, Antonoff’s longtime friend and collaborator, attended the nuptials in a pale blue lace dress with a corset-style bodice. The “Anti-Hero” singer was seen hanging out with Tatum and Kravitz after the ceremony. Max Verstappen overcomes penalty and collision to win Las Vegas Grand Prix
Max Verstappen overcame a five-second penalty, a collision with George Russell and Ferrari’s Charles Leclerc to claim a historic Las Vegas Grand Prix win. On a wild night in Sin City, where the lead of the race changed hands on multiple occasions, it was Verstappen who prevailed to take his 18th win from the 21 rounds so far with popstar Justin Bieber waving the chequered flag. Charles Leclerc passed Sergio Perez on the final lap to finish runner-up, while British driver Lando Norris was taken to hospital for precautionary checks after he crashed out on the third lap at 180mph. The build-up to Formula One’s debut race on the Strip has been mired in controversy following Thursday’s practice washout and Verstappen comparing the Las Vegas race to football’s National League. But the 3.8-mile venue served up a brilliant race which culminated in Verstappen passing Leclerc for the lead on lap 37 of 50. A celebrity-jammed grid dispersed moments before the lights went out in Sin City, and it was Verstappen who raced away from his marks to gazump the pole-sitter into the opening bend. However, Verstappen’s move courted the attention of the stewards with Leclerc forced off the track. Behind, Fernando Alonso’s spin triggered a pile-up as Perez tagged Valtteri Bottas. Carlos Sainz also thudded into Lewis Hamilton, but the latter escaped without damage. The virtual safety car was deployed following the first-corner chaos and when the race resumed three laps later, Norris was in the wall. Norris lost control of his McLaren through Turn 11 and was soon a passenger as he thudded backwards into the concrete wall amid a flurry of orange sparks, before the car righted itself and Norris went head-on into the run-off barriers at Turn 12. Norris’s machine was wrecked in the high-speed smash, but the 23-year-old was on the radio to report he was okay, before he made his way into the medical car. Out came the safety car and Verstappen was dealt a five-second penalty for forcing Leclerc off the road at the first bend. “Yeah, that is fine,” he said over the radio. “Send them my regards.” Verstappen might have felt he would have the sufficient speed in his Red Bull to open up a gap to Leclerc, but the Ferrari man was soon in his mirrors. And on lap 16 the Monegasque swept by to take the lead. In came Verstappen for new tyres. Further back, and Hamilton, who had been on the charge, sustained a puncture following a collision with Oscar Piastri. The seven-time world champion limped back to the pits for repairs, but he emerged 19th and last, and a credible result on American soil was in tatters. In the other Mercedes, Russell, now ahead of Verstappen following the Dutchman’s penalty, had the Red Bull swarming in his mirrors. Verstappen threw his Red Bull underneath a surprised Russell at Turn 12 and the British driver turned into his rival as they duelled for a net third. Russell made contact with Verstappen’s Red Bull with debris falling off both of their machines. The safety car was out for a second time and Leclerc took the lead with Perez moving up to second by virtue of a free pit stop. When the safety car came back in, Perez passed Leclerc to take the lead on lap 32 while Verstappen was also on the move as he swatted Piastri aside for third. Three laps later, and Leclerc was back on top after fighting his way back past Perez. A lap later, Verstappen moved ahead of Perez on the Las Vegas Boulevard for a second, and then on lap 37, he slung his Red Bull underneath Leclerc’s scarlet machine for the lead. Perez looked to have completed a one-two for Red Bull when he made his way ahead of Leclerc with seven laps to go only for the Monegasque to fight his way back past on the last tour. Russell crossed the line in fourth, but was demoted to eighth after he was hit with a a five-second penalty for his collision with Verstappen. Esteban Ocon took fourth, one place ahead of Lance Stroll with Carlos Sainz sixth and Hamilton seventh. Verstappen, Leclerc and Perez were whisked away in a limousine to the front of the Bellagio Hotel to conduct their post-race interviews. “It was a tough one,” said Verstappen after claiming his 53rd career win to move into third on the all-time list alongside Sebastian Vettel. “I tried to go for it at the start. But I ran out of grip and the stewards gave me a penalty which put me on the backfoot. “I had to pass a few cars to get into the battle and it was definitely a lot of fun.” Leclerc said: “What a race. I enjoyed it so much.
