“This one goes out to all the lost carrots over the years that have been just cut into rounds and boiled,” says chef Poppy O’Toole, who goes by Poppy Cooks on social media. “I’m sorry you went out like that. We will do better. Here’s to more carrots being roasted in honey and going out in style. They deserve it.” To make this dish vegan, replace honey with maple syrup and use a dairy-free alternative to butter – and you can boost the flavour even more by adding a crushed garlic clove to the honey and butter mix. Honey roast carrots Serves: 4 Ingredients: 4 carrots, peeled and sliced in half lengthways Vegetable oil, for spraying 2 tbsp runny honey 1 tsp butter Salt and ground black pepper Method: 1. Heat the air fryer to 180C/350F. 2. Get the carrots in the air-fryer basket and spray them with the vegetable oil. Then cook them for 10 minutes. 3. Meanwhile, in a microwaveable bowl, melt the honey and butter together for about 30 seconds, until liquidy, then season well. 4. When the carrots have been in the air fryer for 10 minutes, tip them into the honey and butter mixture and mix well so that they are all coated, then pop them back into the air fryer for a further 10 minutes, until sticky, glazed and tender. Depending on the size of your carrots, you may need to cook them for a little longer, so cook in five-minute intervals until tender. Roast potatoes “Believe it or not, I’m no stranger to a roast potato or two (or seven), and I’ve made it my life’s work to ensure you have the best potatoes on your plate every time,” says O’Toole. “With an air fryer, the process is much quicker, which means potato gets to your mouth in half the time – always a good thing. “For me, the perfect roast potato has a crispy exterior while still maintaining a beautifully fluffy interior, and this recipe does exactly that.” Serves: 2-4, depending on greed Ingredients: 4 Maris Piper, russet or red skin potatoes, peeled and cut into quarters 2 tbsp vegetable oil 1 tsp fine salt Method: 1. Heat the air fryer to 160C/325F. 2. In a mixing bowl, toss the potatoes in the oil and salt, and tip them into the air-fryer basket. 3. Cook for 30 minutes, giving them a proper aggressive toss every 10 minutes, and even poke them with a fork if you want to fluff up the insides further. 4. Increase the heat to 200C/400F and cook for a further six minutes, until golden and crispy. Chestnut and bacon sprouts “Sprouts are underrated and can be such a delicious vegetable side. When they are cooked right, and not pure mush, they add texture, flavour and colour to any dish,” says O’Toole. You can easily customise this dish to your guests’ dietary requirements – skip the bacon if anyone is vegetarian, and swap out for vegan butter if necessary. Serves: 4 Ingredients: 50g butter, melted 500g fresh or frozen Brussels sprouts (if fresh, cut in half) 100g bacon lardons 50g pre-cooked chestnuts, chopped Sea salt flakes and ground black pepper Method: 1. Heat the air fryer to 180C/350F. 2. In a large bowl, mix the butter with the sprouts, season with salt and pepper and place in the air-fryer basket. Just chuck over the bacon lardons. 3. Cook for five minutes then add in the chestnuts. The first day of action at the Las Vegas Grand Prix was called to an abrupt halt after a loose drain cover forced Formula 1 officials to cancel the opening practice session. The much-trumpeted return to ‘’Sin City” could hardly have got off to a worse start, with Carlos Sainz’s Ferrari suffering damage after the cover came free as the Spaniard piloted his car around the street circuit. Alpine have also been forced to repair damage to the chassis of Esteban Ocon‘s car in a farcical start to proceedings in Nevada. Manhole covers are meant to be welded in place before the start of every grand prix. Second practice has been delayed while the drain covers and manholes on the track are inspected by officials, but it is not the first time that they have caused Formula 1 trouble. Here are five previous occasions when F1 has been disrupted in this way. George Russell, Baku 2019 It was only four years ago that George Russell ran into similar bother in Baku, the damage caused to his Williams forcing free practice one at the Azerbaijan Grand Prix to be abandoned. The cover, between turns two and three of the capital city circuit, appeared to have been loosened by Charles Leclerc earlier in the session. Russell’s chassis had to be replaced, leaving him unable to participate in FP2. Romain Grosjean, Malaysia 2017 Romain Grosjean (Haas) was the unfortunate party in Malaysia in 2017, his rear tyre sliced by a manhole cover dislodged by Valtteri Bottas and Kimi Raikkonen. The team subsequently received compensation from the circuit. Valtteri Bottas, Baku 2016 Baku again... Bottas himself had a brush with a cover in his final season at Williams. The Finn was on his way back into the pits at the 2016 European Grand Prix after an installation lap in FP3 but had to sit out the rest of the session after striking a loose drain. Jenson Button, Monaco 2016 That Bottas blunder followed an incident for Jenson Button only two races earlier, his McLaren thrown off course in Monaco by an inspection hatch. Nico Rosberg suffered a puncture but Button’s front wing bore the brunt of the damage. Rubens Barrichello was another driver to fall foul of a cover in the principality, crashing into a wall after being thrown off course by a kerbside grate in 2010. Juan-Pablo Montoya, China 2005 And, finally, another McLaren mishap, with Juan-Pablo Montoya clipping a cover at Turn 10 in China in 2005. Mercedes boss Toto Wolff said he is fuelled by a personal anger and drive to help Lewis Hamilton win the record eighth world championship he was denied in Abu Dhabi. In an interview with the PA news agency ahead of this weekend’s blockbuster Las Vegas Grand Prix, team principal Wolff also revealed his own succession plan at Mercedes – in which he plans to skip as many as 10 races each season – and claimed Hamilton, 38, could compete in Formula One for at least another five years. Wolff has arrived in Sin City for the inaugural night race on the Las Vegas strip following Mercedes’ abysmal performance last time out in Brazil – one he described as the worst of his career. Next month will mark two years since the seven-time world champion last won a race, and that ill-fated evening in Abu Dhabi where race referee Michael Masi’s failure to imply the correct rules left him at the mercy of Verstappen. The Dutchman took the championship in the desert before quickly racking up another two titles in his all-conquering Red Bull. “We are living in a hamster wheel where time passes so quickly that it doesn’t feel like it has been two years,” said Wolff. “You can see how quickly the pecking order changes. We won eight constructors’ championships in a row, and it has been two years since Red Bull have been taking the trophy home. But we have to look forward, learn from the past, and the push now is to make Lewis win quickly again. “I have a personal anger, and drive to make him win the eighth title because he should have had it. “As a team principal, it is important to be fair and open with both drivers. But there is a big part of us that will always want to be a part of that story in undoing and overcoming 2021.” Hamilton will start a new two-year deal with the Silver Arrows next season, worth an estimated £100million. He will be nearly 41 at the conclusion of the contract, but Wolff does not believe it will be his last with Mercedes. “We are living from contract-to-contract, and it is important that we are doing what we think is right and what we feel is right, and at the moment I personally feel he can go longer,” added the Austrian. And could he carry on for another five years? “He is 39 in January, and Fernando (Alonso – 42) is still going strong,” replied Wolff. “As long as you look after yourself, you do the best preparation, physically and mentally, and develop different areas to when you are 25, then yes. “We just need to give him a car that is quick enough. And, as a driver, I have no doubt about him. You have seen in the last races that his performance, speed and race craft are all there. But, if he doesn’t have the car underneath him, he cannot win.” Wolff oversaw Mercedes’ crushing dominance which led to Hamilton winning six of his record-equalling seven world crowns. But Wolff’s future as team principal is in the spotlight following Mercedes’ dramatic demise. And although he admitted he intends to stay on as team principal, the 51-year-old, who also holds a one-third shareholding in Mercedes, is plotting his succession plan. “The clear aim is to build a structure for the future and that is my sheer responsibility for the team,” said Wolff, who was absent from the races in Japan and Qatar earlier this season following knee surgery. “A stone could fall on my head and how does it look afterwards? That is why I would like to see myself in a few years maybe not going to 24 races, and just to 15. “But that is many years away. I see myself in this role for a long time. I cannot imagine doing something else. “I really struggled in 2020 to make a decision on whether I wanted to stay active in the sport or to be a shareholder and go back to my finance world. I was tired, mentally and physically, but then I came to the realisation that I wanted to continue. “I feel I am contributing to the team in the crossover world of finance and motor racing, and I have a passion for both, and that is why I continue to do it.” Over at Red Bull, Verstappen has won 17 of the 20 rounds so far – which included a record 10-in-a-row streak – in the most dominant season the sport has ever witnessed. Wolff caused controversy when he poured scorn on Verstappen’s achievements, calling them “irrelevant” and “only for Wikipedia and nobody reads that anyway”. “It was not an intelligent thing to say,” said Wolff. “There were all these numbers about how many races we had won, and we used to joke that who cares about the numbers? It only goes on Wikipedia, and nobody reads that anyway. It was a joke, but it is much easier to joke about your own records than somebody else’s. “His records are unbelievable and what he has been able to achieve clearly ranks him amongst the greatest drivers in the sport at that young age.
