Chef Maunika Gowardhan: ‘Indian food is so much more than chicken tikka masala’
Chicken tikka masala is a much-loved dish, but it’s only scratching the surface of delicious food cooked in a tandoor. The tandoor – a clay oven used in a lot of Indian cooking – offers a world of possibilities, and that’s something chef Maunika Gowardhan is keen to uncover. It’s not like there’s just one type of chicken tikka. From murgh malai to reshmi tikka, the options are endless – and Gowardhan, 44, had the best exposure possible growing up in Mumbai. “I grew up on really, really good street food – India is such a vibrant, diverse space. In every region you find some sort of street eat somewhere, and every corner of the country will have some sort of kebab or tikka,” she says. “Sometimes, books can have one or two of those recipes – you can’t have a whole book on just that” – and that’s what Gowardhan has set out to change in her latest cookbook, Tandoori Home Cooking. She wants people to recognise the history of the tandoor: “What really sets it apart, for me, is that it’s a cooking technique that is dated back to the Indus Valley [from 3300 BCE to 1300 BCE]. It’s something that is so historic, that has so much of a rich heritage – it’s such a vital part of how we eat, not just in the streets of India or in restaurants, but even in our own homes.” Even though most homes in India don’t have a clay oven, there are plenty of techniques to replicate that smokey flavour. “When you have a look at the way a clay oven works, essentially it’s heat that’s 360 [degrees],” Gowardhan explains. “In our domestic kitchens, the endeavour is to replicate that – conventional ovens provide heat in an encapsulated space. So they are similar, but they’re not the same.” The main difference is the coals at the bottom of a tandoor – when fat drips from any meat or anything else you put in the clay oven, it drips onto the coal and the smoke that is produced gives the food that “charred, grilled smokey flavour”, she says. But how can you get that at home? One of Gowardhan’s genius tips is making smoked butter. “You can store it in the fridge, and when you start basting your food with that smoked butter, you’re getting the charred, smokey flavour that you’re really yearning for in tandoori dishes.” Not that Gowardhan has been perfecting smoked butter from a young age. “I’m going to put my hand up here and say when I first came to England [25 years ago], I didn’t know how to cook Indian food,” Gowardhan, who now lives in Newcastle upon Tyne, confesses. She came to the UK for university, during which she was “thrilled” to be away from her parents with that “sense of freedom”. But after moving to her first house and getting a job in the city of London, Gowardhan says: “It slowly creeps up on you – when you go to an unfamiliar place, what you really miss is that familiarity.” That’s when Gowardhan started to learn how to cook Indian food, because “I craved it and yearned it all the time”, she says. She would ring her mother back in India and ask for simple recipes – daal, rice, green bean dishes. “I cooked not just for sustenance, I cooked because I missed home and I missed good food,” she reflects. Since then, Gowardhan fell in love with food and made her way into the industry, and this is her third cookbook. She now deems it her “calling”, saying: “I knew food was something that was a leveler on every aspect of my life. “When we did really well, my mother would say, ‘Can I make you something?’ If we were really upset she was like, ‘Let me cook for you’.” Gowardhan also suspects some of it comes from her grandmother, who was an “avid cook”. “My grandmother was the hostess with the mostess. In the 1950s in the city of Bombay, a lot of film stars and Bollywood film stars in India would actually come to my grandmother’s house to eat her food. To be a fly on the wall at my grandmother’s dinner parties…” Gowardhan’s grandmother passed down these recipes, and her mother’s passion for food “gave us this effervescence for cooking and eating good food”, she adds. After dedicating the past 20 or so years of her career to Indian food, there’s a major thing Gowardhan would like people to know about the cuisine. “People tend to forget it’s actually a subcontinent. Because it’s a subcontinent, you realise there is so much more, and every community has so much more to say about the food they cook. “Of course, it’s blurred boundaries as you go through every space, but I feel like every 20 or 30 kilometres you’re travelling, the food changes – because the crop changes, because the climate changes, because the soil changes. All of that makes a huge difference.” So, when people ask her to sum up Indian food, Gowardhan says: “It’s like saying, ‘What is your favourite European food?’ Impossible.” ‘Tandoori Home Cooking’ by Maunika Gowardhan (Hardie Grant, £25). Private investigator shares tips to spot a cheater
A private investigator has revealed the top signs that your partner is cheating on you. Charlotte Notley, from Norwich, has spent years investigating suspicious activities, two-timing spouses, and secretive dalliances. Advising people to keep tabs on their other half, she recommends everything from checking browser satnav destinations to surprising your partner at work. Now she shares tips on how to spot a cheater, telling people to trust their guts. “Distance will be the first indicator,” the 32-year-old told NeedToKnow. “Hiding their phone and unexplained times away without much of an explanation is another sign. Check for changes in their social media- new followers and friends,” she said. “Check their browser history on shared devices. Check previous destinations on a Satnav and make a surprise visit to your partner's work or usual place they should be." “You know your partner the best, so if something feels off, then it probably is. “Most clients who come to us know there is something not right and they usually are correct. “Secretive behaviour is a key indicator for any relationship as trust must always be there. “If you feel concerned, ask your partner to reassure you and your trust. “If you are still not satisfied then trust your instinct.” According to the World Population Review, approximately half of the people in married relationships cheat on their spouse. How should we be talking to our daughters about money?
It’s never too early to introduce money skills to children – but how should we be talking to young girls about finances? After all, the gender pay gap is no myth. Among full-time employees, the median hourly pay was 8.3% less for women than men in April 2022, according to the Office of National Statistics (ONS). It impacts pension saving too: a report published by the Institute for Fiscal Studies (IFS) earlier this year found that across all working-age people, women had average total annual pension contributions of £2,600, compared with £3,400 for men. Women are also less likely to invest. In a survey of 6000 UK adults in 2022, Boring Money estimated that only 40% of investors are women. Alexandra Loydon, director of partner engagement and consultancy at wealth management company St. James’s Place, points out that the “financial services industry has traditionally not targeted women”, adding that there is “an opportunity for the industry” to change this. There are also lots of systemic factors that form an important part of the picture, especially in terms of equal opportunities, pay and maternity/paternity leave. Alongside this though, how can parents and guardians help by talking to young girls about money? “We should be encouraging women to engage with their finances from a young age, and save more when they can and if they can. We should ensure that women take advice, put a plan in place, set goals and don’t touch their long-term savings to help build their wealth over time,” says Loydon. Zoe Brett, financial planner at EQ Investors, agrees that “financial literacy needs to start at school age”. Here are three key things to think about when talking to young girls about money… Encourage them to negotiate “We should be instilling and encouraging women to not be afraid to ask for pay rises and promotions. Statistically, women are more likely to not go for jobs if they do not meet all the requirements [compared with men],” says Loydon. So, how can you model this early? “If rewarding good report card or exam results, ask them to tell you how much or what that achievement is worth and why,” suggests Brett. “Or if paying pocket money, then ensure they are earning it with chores and do a pay review each year, where you ask them to make a case for a raise in pocket money.” Teach them basic money language Introducing them to money management concepts can be incorporated into family life. “We often see children’s chores as mowing the lawn or doing household duties, but how about implementing something more financially orientated, like helping with a weekly shopping budget?” suggests Brett. Done in a positive, age-appropriate way, this could help them become familiar and confident with some basic money language. “Being open and discussing finances during family dinners can also be helpful – children are naturally inquisitive and will likely ask questions or at least passively soak up information,” Brett adds. “For something more structured, there are online courses aimed at teens that teach money basics, or even just following a decent financial influencer on social media can be a great way to teach.” Encourage saving for things they want Saving is an important life skill and instilling this early can empower children with a sense of independence around personal finances and earning power. “If I wanted something, my mum would tell me to save up half the cost of it, and she would pay the other half. It taught me to only spend my money on things I truly wanted. If I wasted my money on sweets, then I simply couldn’t have that new toy I wanted,” Brett recalls of her own childhood. “I didn’t realise it at the time, but every time I put money into my savings account, my mum would double it. This lovingly sneaky little trick gave me an early lesson in compounding and made me want to save more, because I could see my savings growing, it was a real sense of achievement.” Of course, not all households will be able to do this, especially when living costs are stretched. But teaching girls how to save, however possible, is so useful. If you are in a position to do so, Brett suggests: “Open a savings account early on and give them autonomy for that account, with a little guidance along the way. Encourage them to put 25% of their pocket money, earnings, or birthday money into the savings account… Encourage is the optimal word here, enforcing it could lead to resentment and rebellion,” she adds.
